Can I travel by train/eurostar from Waterloo or Ashford to Brugge please?

Not all the way to Brugge, no, if you look on www.eurostar.com (which will however give you a price for travelling to Brugge or any other Belgian station, under the ABS option) you will see that Brugge is not one of its destinations. The Eurostar to Brussels stops in Lille and Brussels Gare du Midi. You can change at either for Brugge, but from Lille you may have to change in Kortrijk as well.
You will have to put the date and rough time of travel you want into here: http://www.b-rail.be/int/E/. With departure station London Waterloo and arrival station Brugge (it will ask you to confirm Brugge as there is another station in the town called Brugge St. Pieters, which you don%26#39;t want) it will show you all the possibilities. Incidentally the system makes a distinction between the Eurostar terminal (EST) at Bruxelles-Midi and the rest of the station, but these are in the same building, the Eurostar platforms are 1 and 2 and the rest of the station goes up to platform 17.
Some people find http://bahn.hafas.de/bin/query.exe/en easier to use.

It will soon be possible to take a train from Lille to Brugge and therefore save yourself a lot of time and hassle getting to Brussels and travelling%26quot;back%26quot; to Brugge. Keep an eye out for info as the details have not yet been confirmed.

It%26#39;s very easy to go by Eurostar to Brussels and on to Brugge. As gaminari said your Eusrostar ticket includes onward travel to any Belgian station.
Brussels Midi is quite an easy station to negotiate in terms of the information you are given - the eurostar terminal is well signposted and the info screens easy to understand - and we%26#39;ve been to Brugge a couple of time and to Ghent and have had no problem finding an onward train at Brussels Midi (though coming back from Ghent we did have a mild panic that we were travelling back tio Brussels Zuid rather that Midi until we realised it was the same place. Our ignorance of languages I%26#39;m afraid!).
Journey time from Brussels to Brugge is about an hour so you do need to factor this into your decision as to when to travel etc..
